Frosted Berry Cupcakes

Hey! It's Lily here and this recipe is very good for people who really like berries, so, here is the recipe! Enjoy!

How to make frosted berry cupcakes.

You will need, 1/2 cup of butter or margarine, softened, 1/2 cup of superfine sugar, 2 tsp of orange flower water or lemon or orange extract, 2 extra large eggs, lightly beaten, 1/2 cup of ground almonds, 1 cup of self-rising flour, 2 tbsp of milk.

Frosting: 10 1/2 oz of cream cheese, 1/2 cup of superfine sugar, 4 tbsp of orange juice fresh or store bought.

To decorate: fresh mint leaves, 1 1/2 cups of berries like, raspberries, blackberries, and blueberries.

Preheat the oven to 350 degrees.  Put 12 paper liners into a shallow muffin pan.

Place butter, superfine sugar, and orange flower water in a large bowl and beat together until light and fluffy.  Gradually beat in the eggs.  Stir in the ground almonds.  Sift in the flour and, using a spoon, fold in gently with milk.

Spoon the batter into the paper liners.  Bake in the preheated oven for 15-20 minutes, until risen, golden, and firm to the touch.  Let cool on top of the stove.

To make frosting, put in the cream cheese, superfine sugar, and orange juice in a bowl and beat together until smooth.

Swirl frosting over top of the cupcakes and arrange the berries and mint leaves on top.
