blueberry cupcakes

How to make blueberry cupcakes.

You will need,1/2 cup of butter softened, 3/4 cup of sugar, 2 eggs beaten, 1 cup of flour, 3/4 cup of dried blueberries, 1/2 tsp of baking powder and 2 tbsp of milk.

Place the butter and sugar in a large bowl and beat together until light and fluffy.

Then, gradually beat in the eggs.

Sift in the flour and baking powder and fold into the batter.

Then fold in the blueberries and milk.

Spoon the batter into a muffin pan.

Bake in a preheated oven at 350ºF for 25 mins or until golden brown and firm to the touch.

Let them cool in the pan for 10mins.  Then transfer them on to a plate to cool more.

  1. These look absolutely delicious. I love blueberry muffins. I think it would be fun to make mini muffins with this recipe! Have you ever tried that?
